Tortitas
de Camaron con Mojo de Ajo
1 lb shrimp, cooked, peeled, and deveined
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon pepper
2 large eggs
1/4 cup beer
2 tbsp. sofrito
Garlic powder
Coarsely chop shrimp, set aside.
Beat flour and next 5 ingredients at medium speed with an electric
mixer until smooth.
Stir in shrimp, and the rest of the ingredients; cover and chill 2
hours.
Fry in plenty of hot oil, drop batter by rounded tablespoonfuls, and
fry, in batches, 5 minutes or until golden. Drain on paper towels.
This makes about 10, so double the recipe.
Dipping Sauce: 1 garlic head, 1 cup olive oil, run
thru blender - that's it. Put in airtight container in the
fridge.
